This easy cocktail-float is a super fun spin on a classic mojito. It combines fresh strawberries, mint, lime, and rum with bubbly soda water, then finishes things off with a scoop (or two) of strawberry ice cream. The result is a drink that's refreshing and light, with just enough creamy sweetness to feel indulgent too.

Helpful Tips

Use ripe, sweet strawberries. The better your berries, the better the flavor of the mojito.

Lightly muddle the mint. Gently press the mint leaves to release their aroma without shredding them, which can make the drink taste bitter.

Chill everything first. Cold soda water, cold rum, and chilled glasses help keep the float refreshing and prevent the ice cream from melting too quickly.

Adjust the sweetness. If your strawberries aren't very sweet, you can add a splash of simple syrup or a pinch of sugar to the cocktail.

Fun Variations

  • Mocktail version: Skip the rum and add extra soda water or lemon-lime soda for a refreshing, family-friendly mocktail.
  • Strawbery Lime float: Swap strawberry ice cream for lime or lemon sorbet for a tangier, ultra-refreshing twist.
  • Mixed berry float: Add raspberries or blueberries along with the strawberries for a fun twist.
  • Coconut Strawberry Mojito Float: Use coconut rum instead of white rum for a tropical spin. Tastes like vacation!
  • Extra minty: Add a few extra mint leaves or a splash of mint simple syrup for a stronger mint flavor.
