For faster cooling, spread the quinoa in a thin, even layer on a lined sheet pan and place it in the freezer for a few minutes. Quinoa can be prepared 3–4 days in advance.
- To prepare the dressing, juice one lemon and one orange to yield approximately 1 tablespoon of juice from each. Add all the dressing ingredients (minced garlic, Dijon mustard, apple cider vinegar, lemon juice, orange juice, olive oil, and honey) into a Mason jar.
