  • 4 tablespoons unsalted butter
  • 13 ounces Italian-style chicken sausage, diced
  • 1/2 cup sun-dried tomatoes in oil (see Note 4)
  • 2 cups frozen peas
  • basil pesto for serving (see Note 5)
  • 1/2 cup ribboned fresh basil (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Generously spray a glass or ceramic 9×13-inch pan with cooking spray. Cut butter into 6 equal slices and set aside. Peel carrots, grate on large holes of a grater, and measure to get 2 cups.
  2. Add uncooked basmati rice to the prepared pan, along with chicken stock, grated carrots, all the seasonings (Italian seasoning, paprika, garlic powder, onion powder), and salt and pepper to taste (we recommend 1-1/4 tsp salt and 1/2 tsp pepper). Stir with a wooden spoon until ingredients are well combined and spread in an even layer. Add the cut pieces of butter evenly on top. Cover the baking dish tightly with aluminum foil. Bake for 40 minutes. Meanwhile, dice the chicken sausage into small, bite-sized pieces (we cut each sausage in half lengthwise, then in half again, then into small pieces).
  3. After 40 minutes, carefully remove the foil (set it aside to reuse). Do not stir the rice at this stage! Evenly top the rice with the sun-dried tomatoes and diced sausage. Place the pan back in the oven, uncovered, and bake for another 15 minutes.
  4. Remove the pan from the oven. Again, do not stir the rice. Top the pan with the foil again and let it stand at room temperature for 10 minutes. This resting period is crucial to allow the rice to fully steam and become tender, preventing it from turning mushy.
  5. After 10 minutes, remove the foil and add the frozen peas on top. Gently mix everything together and lightly fluff the rice with a fork. If desired, add fresh basil to taste (we add 1/2 cup, ribboned). Taste and add additional salt or pepper if needed. Gently stir the basil through, then serve immediately. Add a generous scoop of basil pesto atop each bowl and gently mix it in before enjoying!
