  • 1 finely diced red bell pepper (approx. 1 cup)
  • 2 tablespoons minced garlic (from 4 to 6 cloves)

  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano

  3. Combine & Cook (Method Choice): Rinse the dried black beans thoroughly in a strainer and carefully pick through them, discarding any shriveled beans, small stones, or debris. Add the rinsed beans, chicken/vegetable stock, and water to the pressure cooker or slow cooker. Stir in the chipotle peppers in adobo sauce and the bay leaf. Season with salt and pepper to taste (I typically start with 2 teaspoons of salt and 1/2 teaspoon of pepper, but adjust to your preference and the saltiness of your stock).
    • Slow Cooker Method: Stir everything together well. Cover the slow cooker and cook on HIGH for 7–9 hours, or until the beans are wonderfully silky-tender. (Note: 8 hours on HIGH typically yields perfect results in my Crock-Pot.)
    • Pressure Cooker Method (Instant Pot): Seal the pressure cooker lid and turn the valve to ‘Sealing’. Cook on manual mode (or pressure cook) for 45 minutes on HIGH pressure. (It will take about 15–20 minutes for the pot to come up to pressure.) Once the cooking cycle is complete, allow for a natural pressure release for 25 minutes. It’s highly recommended to set a timer for this period to ensure optimal tenderness. After 25 minutes, manually release any remaining pressure.
  4. Finish & Serve: Carefully remove the lid from your cooker. Taste the beans and adjust seasoning as needed. I often find adding another 1 teaspoon of salt at this stage helps the flavors sing, but this depends on the salt content of your stock. Remove and discard the chipotle peppers (they will continue to add heat if left in) and the bay leaf. Stir in the chopped cilantro, if desired, and squeeze in fresh lime juice to brighten all the flavors. Stir everything through. Serve these delicious beans as a flavorful side dish or incorporate them into another recipe. The beans will continue to thicken as they cool and will become even more flavorful if stored in the fridge overnight. I recommend storing the beans in their cooking liquid and draining as needed for various recipes.
