Carefully pour all the hot bacon grease into this foil-lined bowl. Measure out 1 tablespoon of bacon grease to return to the skillet for sautéing vegetables, if desired. Allow the remaining grease in the foil to harden completely at room temperature. Once solid, you can either save this hardened bacon grease for future cooking (it adds incredible flavor!) or simply crumple the foil with the solidified grease and discard it safely in the trash. Never pour grease down your drain!

Storage Tips: Let the quiche cool completely at room temperature. Then, cover it tightly and store in the refrigerator for up to 3 days. To reheat, cover with foil and bake at 325°F (160°C) for 10–15 minutes until warmed through. For freezing, wrap the cooled quiche tightly in plastic wrap, then foil, and freeze for 1–2 months. Thaw overnight in the fridge before reheating. Note that freezing might slightly alter the custard’s texture, making it a bit more watery.
