Your New Go-To for a Quick, Flavorful, and Healthy Dinner!

After a recent poll on Instagram, it was clear that many of you were craving more delicious low-carb recipes. While I personally don’t strictly adhere to a low-carb diet (my honey whole wheat bread is a testament to that!), I’m constantly looking for creative ways to make my favorite comfort foods healthier, more veggie-packed, and better for you without sacrificing flavor.

That desire led me to create this Unstuffed Peppers recipe. I already love dishes like zucchini boats for a fantastic lower-carb dinner in my household, so I had a strong feeling that a deconstructed version of classic stuffed peppers would be a huge hit—and I was absolutely right! These Unstuffed Peppers are incredibly easy to prepare, brimming with robust flavors, and packed with wholesome ingredients. It’s a dinner that offers all the comforting taste of traditional stuffed peppers in a fraction of the time, making it a definite repeater on my weekly menu!

Step-by-step process of preparing Unstuffed Peppers: adding fresh vegetables, ground meat, seasonings, rich marinara sauce, and gooey cheese to a hot skillet, then cooking until perfectly done.

This recipe isn’t just a meal; it’s a game-changer for busy weeknights and a fantastic addition to any healthy eating plan. Here’s why you’ll want to add it to your rotation:

Key Ingredients for Flavorful Unstuffed Peppers

Crafting truly delicious unstuffed peppers starts with selecting quality ingredients. Here’s a closer look at what makes this dish shine and some tips for each:

  • Ground Turkey: Opt for lean ground turkey (93/7 blend is excellent) that comes in a carton rather than a plastic chub. Ground turkey from a carton generally has a better texture and less excess water, leading to a more flavorful and less soggy dish. You can also use ground beef or chicken if preferred.
  • Bell Peppers: Don’t stick to just one color! Using a vibrant mix of bell peppers—like red, orange, and yellow—adds visual appeal, varying levels of sweetness, and a broader spectrum of nutrients. Green bell peppers offer a slightly more bitter, earthy flavor if you enjoy that. Dice them finely for even cooking and distribution.
  • Yellow Onion & Minced Garlic: These aromatic staples form the flavor base of our dish. Finely dicing the onion ensures it softens beautifully and blends seamlessly into the sauce. Freshly minced garlic provides the best flavor, but pre-minced works in a pinch.
  • Tomato Paste: A small amount of tomato paste adds a concentrated depth of tomato flavor and helps to thicken the sauce, creating a richer base.
  • Spices: A blend of chili powder, ground cumin, Italian seasoning, onion powder, and roasted garlic powder creates that classic, comforting stuffed pepper taste. A touch of red pepper flakes (optional) can be added for a subtle kick.
  • Beef Bouillon Cube: This secret ingredient significantly enhances the savory, umami notes, giving the ground turkey and sauce a richer, deeper flavor profile. Crumble it thoroughly before adding to ensure it dissolves quickly and evenly.
  • Fire-Roasted Diced Tomatoes: Using fire-roasted diced tomatoes is a simple hack for adding a smoky, complex layer of flavor without any extra effort. They bring a wonderful depth that regular diced tomatoes simply can’t match.
  • Worcestershire Sauce: A splash of Worcestershire sauce contributes a fantastic savory, slightly tangy note that complements the meat and tomato base beautifully, adding complexity to the overall flavor.
  • Marinara Sauce: The quality of your marinara sauce truly matters here. A high-quality marinara, such as Rao’s, makes a noticeable difference in the final taste of your unstuffed peppers. It brings a balanced acidity and herbaceousness that ties all the flavors together.
  • Sharp Cheddar Cheese: Freshly shredded sharp cheddar cheese melts into a gooey, savory topping that is irresistible. Shredding your own cheese often results in a better melt compared to pre-shredded varieties, which can contain anti-caking agents.
  • Fresh Italian Parsley: A garnish of freshly chopped Italian parsley adds a pop of color and a fresh, bright finish that elevates the dish.

Quick Tip: Avoid Tomato Stains!

To prevent those stubborn tomato sauce stains on your reusable plastic containers, transfer any leftover Unstuffed Peppers into glass containers, disposable plasticware, or opt for dark-colored reusable plasticware that won’t show the red tint.

How To Make Unstuffed Peppers: A Step-by-Step Guide

This one-skillet recipe is incredibly straightforward, designed for maximum flavor with minimal effort. Here are some detailed tips to ensure your Unstuffed Peppers turn out perfectly every time:

  1. Sauté the Aromatics and Veggies: Begin by preheating your oven to 350°F (175°C) and heating 2 tablespoons of olive oil in a large, oven-safe 12-inch skillet over medium-high heat. Once the oil is shimmering, add your finely diced yellow onion and chopped bell peppers. Sauté them for 6-8 minutes, stirring occasionally, until they are tender and slightly softened but not burnt. Next, stir in the minced garlic for about 30 seconds until fragrant. Add the tomato paste and all the dry seasonings: chili powder, cumin, Italian seasoning, onion powder, roasted garlic powder, and the optional red pepper flakes. Season generously with salt and pepper to taste (I typically use about ¾ teaspoon salt and ¼ teaspoon pepper). Continue to sauté for another 30 seconds until the spices are fragrant.
  2. Brown the Ground Turkey: Push the sautéed vegetables to the sides of the pan, creating a clear space in the center. Drizzle the remaining 1 tablespoon of olive oil into this cleared area and add the ground turkey. Allow the turkey to cook undisturbed for 1-2 minutes until a golden brown crust forms on the bottom – this crucial step builds incredible flavor. Then, break the turkey up into smaller chunks with your spoon. Continue to cook and crumble the ground turkey until it’s fully browned, gradually incorporating the cooked vegetables into the meat as it cooks, which should take about 5 more minutes.
  3. Build the Rich Sauce: Once the turkey is browned, add the can of fire-roasted diced tomatoes, Worcestershire sauce, and the crumbled beef bouillon cube to the skillet. Stir everything together, allowing the mixture to simmer and cook off most of the liquid from the tomatoes. This concentrates the flavors beautifully. Finally, stir in the marinara sauce and let it heat through for a couple of minutes until the sauce is warm and well combined.
  4. Melt the Cheese to Perfection: Sprinkle the freshly shredded sharp cheddar cheese evenly over the top of the entire skillet. Immediately transfer the oven-safe pan to the preheated oven. Bake for 4-8 minutes, or until the cheese is beautifully melted, bubbly, and slightly golden. If your skillet is not oven-safe, simply cover the pan with a lid, remove it from the heat, and allow the residual heat to melt the cheese while it stands for a few minutes.
  5. Garnish and Serve: Carefully remove the skillet from the oven. Garnish generously with freshly chopped Italian parsley for a burst of fresh flavor and vibrant color. Serve your delicious Unstuffed Peppers over cooked cauliflower rice for a low-carb option, or traditional white or brown rice for a more classic meal. For an extra touch of flavor and richness, drizzle a little olive oil over your rice before serving.

Pro Tips for the Best Unstuffed Peppers

Elevate your unstuffed peppers with these helpful hints and customization ideas:

  • Choosing Your Ground Meat: While ground turkey is featured here, feel free to use lean ground beef, ground chicken, or even a plant-based ground meat substitute. Adjust cooking times slightly as needed for different meats.
  • Customize Your Veggies: Don’t limit yourself to just bell peppers and onions! This recipe is incredibly adaptable. Consider adding diced zucchini, mushrooms, or a handful of fresh spinach during the sautéing stage for extra nutrients and flavor.
  • Adjusting Spice Levels: If you love a little heat, increase the amount of red pepper flakes. For a milder dish, omit them entirely. You can also add a pinch of smoked paprika for an extra layer of smoky flavor.
  • Serving Suggestions Beyond Rice: While rice or cauliflower rice are fantastic, these unstuffed peppers are also delicious served over mashed potatoes, polenta, quinoa, or even stuffed into large lettuce cups for an even lighter meal. For a heartier option, serve with crusty bread for dipping in the savory sauce.
  • Make it a Meal Prep Star: This recipe is excellent for meal prepping! Cook a double batch and portion it into individual containers for quick, healthy lunches or dinners throughout the week.

Storage and Reheating

Got Leftovers?

  • Storing: Allow the Unstuffed Peppers to cool completely to room temperature before transferring them to airtight containers. They can be stored in the refrigerator for up to 4 days, maintaining their delicious flavor.
  • Reheating: For best results, reheat individual portions in the microwave, stirring occasionally until hot. Alternatively, you can reheat the entire dish in an oven-safe dish at 350°F (175°C) until thoroughly warmed through, which helps to preserve texture.
  • Freezing: This dish freezes beautifully! For longer storage, transfer the cooled Unstuffed Peppers into freezer-safe airtight containers. They will keep well in the freezer for up to 3 months. Thaw overnight in the refrigerator before reheating.

Equipment

  • Oven-safe pan (12-inch)

Ingredients

  • 3 tablespoons olive oil, divided
  • 1-1/2 cups finely diced yellow onion (1 large onion)
  • 2 cups chopped bell peppers (2 large peppers; I use 1 red and 1 orange)
  • 1 tablespoon minced garlic (3 cloves)
  • 1 tablespoon tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon roasted garlic powder
  • 1/8 teaspoon red pepper flakes, optional
  • Salt and pepper, to taste
  • 1 pound lean ground turkey (93/7, see note 1)
  • 1 large beef bouillon cube, crumbled
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup marinara sauce (I love Rao’s)
  • 1-1/4 cup freshly shredded sharp Cheddar cheese
  • 3 to 4 tablespoons freshly chopped Italian parsley, for garnish
  • Cooked rice or cauliflower rice, for serving (see note 2)

Instructions

  1. Preheat oven to 350°F (175°C). Heat 2 tablespoons olive oil in an oven-safe 12-inch pan over medium-high heat. Once hot, add finely diced onion and chopped bell peppers. Sauté 6–8 minutes or until softened. Add garlic and stir for 30 seconds. Stir in tomato paste and seasonings: chili powder, cumin, Italian seasoning, onion powder, roasted garlic powder, and optional red pepper flakes. Season with salt and pepper to taste; I add 3/4 teaspoon salt and 1/4 teaspoon pepper. Sauté until fragrant, about 30 seconds.
  2. Move veggies to the sides of the pan. Drizzle remaining 1 tablespoon olive oil in the center and add ground turkey. Let cook without stirring, until golden brown on the bottom, about 1–2 minutes, then break up into chunks. Continue to cook and crumble ground turkey until browned, incorporating veggies as you cook, about 5 more minutes.
  3. Add in fire-roasted diced tomatoes, Worcestershire sauce, and crumbled beef bouillon cube. Stir to incorporate and cook off most of the liquid from the tomatoes. Add in marinara sauce and stir to heat through.
  4. Sprinkle with Cheddar cheese and immediately transfer the pan to the oven. Bake 4–8 minutes or until cheese is melted and bubbly. Top with fresh parsley. (If this dish wasn’t cooked in an oven-safe skillet, cover the pan, remove from heat, and allow the residual heat to melt the cheese while it stands.)
  5. Serve over cooked cauliflower rice or regular rice.

Recipe Notes

Note 1: For the best texture and flavor, I highly recommend using ground turkey that is sold in a carton, rather than the kind packaged in a plastic chub. The chub ground turkey often contains excess water, which can dilute the flavor and impact the final consistency of your dish.

Note 2: Riced cauliflower is my absolute favorite way to serve these Unstuffed Peppers, providing a perfect low-carb base. For a quick and easy side, I simply purchase two bags of frozen cauliflower rice. I add both bags directly from the freezer to a very large nonstick pan and cook, stirring every once in a while, until the cauliflower rice is tender and has a slightly charred, flavorful edge.

Storage: Allow the dish to cool completely before transferring to an airtight container. Refrigerate for up to 4 days. To freeze, store in airtight, freezer-safe containers for up to 3 months.
