- Add the first nine ingredients – celery, yellow onion, green bell pepper, minced garlic, fire-roasted diced tomatoes (undrained), boneless and skinless chicken thighs, thinly sliced smoked sausage, chicken broth, and Creole seasoning – into the inner pot of a 6-quart Instant Pot. If you choose to use it, add the dried bay leaf at this point.
- Secure the Instant Pot lid, ensuring that the sealing ring is properly fitted and the steam release valve is set to the “Sealing” position. Set the Instant Pot to pressure cook on HIGH for 8 minutes.
