So, when I was hosting a baby shower for my sister, naturally, I baked a large batch of these beloved cookies. Alongside, I whipped up a stunning carrot cake complete with its essential, creamy cream cheese frosting. It was an afternoon of delightful baking!
As often happens in the kitchen, a little experimentation led to a magnificent discovery. I found myself with a bit of leftover cream cheese frosting, and on a whim, decided to top a few of the graham cracker cookies with it. The combination was pure magic – perhaps the most delicious pairing I had ever tasted! But why stop there? I quickly prepared a batch of homemade caramel sauce and drizzled it generously over the frosted cookies, adding that crucial touch of salted sweetness. The result? Absolute perfection. These were, without a doubt, among the best cookies I have ever created.
The cookies were such an incredible success at the shower that not a single one remained. Everyone raved about them, and I received countless requests for the recipe. Key Ingredients for Bakery-Style Salted Caramel Cookies
Crafting these exceptional Salted Caramel Cookies requires a thoughtful selection of ingredients for each delicious component: the soft graham cracker cookies, the creamy mascarpone frosting, and the rich, homemade salted caramel sauce. Here’s what you’ll need and why each element is crucial:
For the Irresistibly Soft Cookies:
- Butter, White & Brown Sugars: This classic combination forms the backbone of a truly great cookie. Melted butter adds richness and chewiness. Granulated sugar provides sweetness and contributes to the cookie’s crisp edges, while light brown sugar adds a deeper, molasses-rich flavor and ensures a moist, tender crumb.
- Egg & Egg Yolk, Vanilla Extract: The whole egg acts as a binder, while the extra egg yolk dramatically increases the cookie’s richness and chewiness, preventing a dry texture. A high-quality vanilla extract is essential for its warm, aromatic notes that complement the graham cracker and caramel flavors beautifully.
- All-Purpose Flour, Baking Soda, Cornstarch, Salt: Flour provides the structure. Baking soda helps the cookies rise and spread slightly, giving them a soft, cake-like center. Cornstarch is the secret ingredient for extra tenderness and that desirable melt-in-your-mouth texture, while fine sea salt balances the sweetness and enhances all the other flavors.
- Graham Cracker Crumbs: The star of the cookie base! These finely ground crumbs infuse the cookies with a distinctive, slightly spiced, honey-like flavor and a wonderfully unique texture that sets them apart from traditional sugar cookies. They truly make these “graham cracker cookies” special.
For the Luxurious Mascarpone Cream Cheese Frosting:
- Cream Cheese, Mascarpone, Unsalted Butter: This trio creates an incredibly rich, smooth, and perfectly balanced frosting. Full-fat cream cheese provides a delightful tang, while mascarpone cheese (an Italian cream cheese) adds unparalleled richness and a silky texture. Softened unsalted butter ensures a stable, decadent base.
- Vanilla Extract, Fine Sea Salt, Powdered Sugar: Vanilla extract enhances the creamy flavor, while a touch of fine sea salt subtly cuts through the sweetness and brightens the overall taste. Powdered sugar (confectioners’ sugar) provides the necessary sweetness and ensures a smooth, lump-free frosting consistency.
For the Decadent Homemade Salted Caramel Sauce:
- Unsalted Butter, Light Brown Sugar, Light Corn Syrup, Sweetened Condensed Milk: These ingredients combine to create a deeply flavorful, glossy, and perfectly pourable caramel. Brown sugar adds depth, while corn syrup is crucial for preventing crystallization, resulting in a smooth caramel every time. Sweetened condensed milk provides a rich, creamy body.
- Vanilla Extract, Sea Salt: Vanilla extract rounds out the caramel’s sweetness with its warm notes. The addition of sea salt transforms it into “salted caramel,” creating that addictive sweet-and-salty contrast that makes these cookies so exceptional. Adjust the salt to your personal preference for the perfect balance.

How To Master Salted Caramel Cookies: A Step-by-Step Guide
Creating these divine Salted Caramel Cookies is a rewarding process that breaks down into three main stages: preparing the cookie dough, whipping up the luscious frosting, and crafting the perfect salted caramel sauce. Follow these detailed instructions for bakery-quality results:
1. Crafting the Perfect Graham Cracker Cookie Dough:
- Prepare Your Wet Ingredients: Begin by melting the unsalted butter in a microwave-safe bowl. It’s crucial to let this melted butter cool to room temperature (about 5 minutes) before proceeding. Hot butter can melt the sugars, leading to greasy, flat cookies. Once cooled, pour the butter into a large mixing bowl. Add both light brown sugar and granulated sugar. Stir vigorously until the sugars are completely dissolved and the mixture is smooth and well-combined.
- Incorporate Eggs and Vanilla: To the butter and sugar mixture, add one large whole egg and one large egg yolk. (You can save the egg white for another recipe, such as an egg skillet or a quick egg wrap). Stir in the vanilla extract until everything is smooth and fully incorporated.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, fine sea salt, and cornstarch. For the graham cracker crumbs, blend whole graham crackers in a blender or food processor until you achieve 1 cup of very fine, lightly packed crumbs. Add these fine crumbs to your dry ingredient mixture and stir well to combine.
- Gently Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients. Mix until they are just combined. It’s important to avoid overmixing at this stage, as it can lead to tough cookies. Mix only until no streaks of flour remain.
- Shape and Chill the Dough: Using a tablespoon, measure out approximately 2 tablespoons (about 45g if using a food scale) of dough per cookie. Roll these portions into tall, cylindrical shapes rather than perfectly round balls. Place the shaped dough on a parchment paper-lined plate, cover it tightly, and chill in the refrigerator for a minimum of 1 hour, or up to 4 hours. Chilling is essential for flavor development and prevents excessive spreading during baking.
- Bake to Perfection: Preheat your oven to 325°F (162°C) and line a sheet pan with parchment paper or a silicone baking mat. Arrange no more than 6 dough cylinders per sheet pan, as these cookies will spread significantly. Bake for 10-14 minutes, or until the edges are lightly golden brown and the centers are still soft. Immediately upon removing from the oven, use the back of a spoon to gently press the edges of each cookie inward towards the center. Work quickly, as the cookies firm up fast. This technique creates those desirable crispy edges and a perfectly round shape. Let the cookies rest on the baking tray for another 4 minutes before carefully transferring them to a cooling rack to cool completely. They must be entirely cool before frosting.
2. Preparing the Velvety Mascarpone Cream Cheese Frosting:
- Whip the Creamy Base: In a stand mixer fitted with the whisk attachment (or a large bowl with a hand mixer), combine the softened (not melted) full-fat cream cheese, softened mascarpone cheese, and softened unsalted butter. Beat on medium-high speed for about 2 minutes until the mixture is beautifully creamy and smooth.
- Add Flavor and Sweetness: Stir in the vanilla extract and fine sea salt. Continue to beat until smooth. Gradually add the powdered sugar, one cup at a time, beating well between each addition until the frosting is soft, creamy, and lump-free. Be careful not to overbeat, as this can incorporate too much air and result in a whipped, less stable frosting. If your frosting is too wet, add a bit more powdered sugar; if it’s too dry, a touch of milk or cream can help achieve the perfect consistency.
- Frost the Cooled Cookies: Once the cookies are completely cool, generously spread the mascarpone cream cheese frosting over each one using a table knife or an offset spatula. Depending on how much frosting you prefer (I like a lot!), you may have some leftover. (See Note 1 below for delicious ways to use extra frosting).
3. Crafting the Irresistible Salted Caramel Sauce:
- Combine Caramel Base Ingredients: In a medium pot over medium heat, combine the unsalted butter, light brown sugar, light corn syrup (like Karo), and a 14-ounce can of regular sweetened condensed milk (ensure it’s not fat-free for best results). Stir constantly with a whisk or wooden spoon until the butter is completely melted and all ingredients are thoroughly combined and smooth.
- Boil and Remove: Bring the mixture to a full boil, continuing to stir constantly for exactly 2 minutes. This constant stirring is vital to prevent burning and ensure even cooking. Immediately remove the pot from the heat after 2 minutes.
- Add Flavor and Salt: Allow the caramel mixture to cool for about 2-3 minutes, stirring occasionally. Then, stir in the vanilla extract. Next, add the fine sea salt gradually, tasting as you go. Different salts can have varying intensities, so add more for a pronounced salted caramel flavor or less if you simply want to season the sauce.
- Thicken and Drizzle: Let the caramel sauce stand for approximately 10 minutes to thicken to a perfect drizzling consistency, stirring occasionally during this time. Once cooled slightly, carefully transfer the caramel to a resealable plastic bag. Seal the bag, ensuring to remove any excess air, and snip off a small corner of the tip with scissors. Pipe a generous, artistic drizzle of the warm, luscious caramel over each frosted cookie. For an extra decorative and flavorful touch, you can optionally top each cookie with an unwrapped and halved soft caramel piece and a small sprinkle of flaky sea salt.
Quick Tip for a Decorative Finish
For an added touch of elegance and flavor, consider topping each cookie with half of a Werther’s Soft Caramel. These easily accessible and wonderfully chewy caramels melt slightly into the frosting, creating a beautiful and delicious garnish that perfectly complements the overall flavor profile of the Salted Caramel Cookies.

Expert Tips for Perfect Salted Caramel Cookies Every Time
Achieving bakery-quality Salted Caramel Cookies is easy with a few key techniques. Here are my top tips to ensure your cookies turn out perfectly:
- Don’t Waste That Egg White: This recipe calls for one whole egg and an extra egg yolk. Instead of discarding the leftover egg white, save it! It’s perfect for enriching dishes like a country breakfast egg skillet, adding protein to a smoothie, or even for making a light, fluffy egg wrap.
- Cool Melted Butter Properly: It’s absolutely crucial to allow your melted butter to cool to room temperature before combining it with the sugars and other wet ingredients. If the butter is hot, it will melt the sugars prematurely, leading to a greasy cookie dough and cookies that spread too much and have an undesirable texture. Patience here makes all the difference!
- Chill Your Dough Adequately: Chilling the cookie dough for the recommended 1 to 4 hours is non-negotiable. This step allows the butter to re-solidify, preventing the cookies from spreading excessively during baking. More importantly, it gives the flavors (especially the graham cracker) time to meld and deepen, resulting in a richer, more complex taste and a much better texture. Avoid over-chilling for more than 4 hours, as the dough can become too stiff and dry, making it difficult to work with and potentially affecting the final cookie texture.
- Measure Flour with Precision: The amount of flour significantly impacts the texture of your cookies. To measure correctly, always use the “spoon and level” method: gently spoon the flour into your measuring cup until it’s overflowing, then use the back of a straight knife or a flat edge to level off the excess. Never scoop flour directly from the bag with your measuring cup, as this compacts the flour, adding too much and resulting in dry, dense cookies.
- Don’t Overmix the Dough: Once the wet and dry ingredients are combined, mix only until just combined. Overmixing develops the gluten in the flour, which can lead to tough, chewy cookies instead of the desired soft and tender texture.
- Ensure Room Temperature Frosting Ingredients: For the smoothest, creamiest frosting, make sure your cream cheese, mascarpone, and butter are all at proper room temperature. This allows them to blend together seamlessly without lumps, creating that luxurious, silky consistency.
- Quality Vanilla Makes a Difference: While it might seem like a small detail, using a good quality vanilla extract in both the cookies, frosting, and caramel elevates the overall flavor profile. Its warm notes enhance and complement the other ingredients beautifully.
- Don’t Rush the Cooling Process: It’s tempting to frost warm cookies, but resist! Frosting cookies before they are completely cool will result in a melted, runny mess. Allow ample time for them to cool fully on a rack before applying the luscious mascarpone cream cheese frosting.
Storage Tips for Salted Caramel Cookies
To keep your Salted Caramel Cookies fresh and delicious, proper storage is key:
- Unfrosted Cookies: Store unfrosted cookies in an airtight container at room temperature for up to 3-4 days. They will maintain their soft texture beautifully.
- Frosting & Caramel Sauce: Keep any leftover mascarpone cream cheese frosting and homemade caramel sauce in separate airtight containers in the refrigerator. The frosting will last for up to 1 week, and the caramel sauce for up to 2-3 weeks.
- Assembling Just Before Serving: For the best texture and appearance, it’s recommended to assemble (frost and drizzle with caramel) the cookies just before you plan to serve them. This prevents the cookies from becoming soggy and keeps the frosting and caramel looking fresh.
- Warming Caramel Sauce: If your refrigerated caramel sauce has thickened too much, gently warm it in the microwave in 15-second intervals, stirring between each, until it reaches a drizzling consistency.
- Freeze Uncooked Dough Balls: You can freeze uncooked dough balls in a freezer-safe bag or airtight container for up to 2-3 months. When ready to bake, place frozen dough balls on a prepared baking sheet and add an extra 2-4 minutes to the baking time. This is a fantastic way to enjoy fresh-baked cookies whenever a craving strikes!
- Assembled Cookie Storage: Once frosted and drizzled with caramel, store the cookies in an airtight container in the refrigerator for up to 3 days. Bring them to room temperature for 15-20 minutes before serving for optimal flavor and texture.

Instructions
Cookies
- Melt the butter in a microwave-safe bowl. Set aside and let cool to room temperature, about 5 minutes. (If butter is hot when added to sugars, it will melt the sugars and cause greasy cookies.) Once butter has cooled, pour it into a large bowl. Add brown and granulated sugar. Stir well until completely incorporated and smooth.
- Add 1 full egg and 1 egg yolk. (Discard the white or save for another recipe). Add vanilla and stir until smooth.
- In another bowl, toss together flour, baking soda, salt, and cornstarch. Add whole graham crackers to a blender or food processor and crush until you have 1 cup of very fine crumbs (gently pack in the measuring cup). Add graham cracker crumbs to the dry ingredients. Stir everything to combine.
- Combine the wet and dry ingredients and mix until just combined, avoiding overmixing.
- Using a tablespoon, measure 2 tablespoons dough per cookie (45g if you have a food scale). Roll dough balls large and tall (rather than round). Place on a parchment paper-lined plate, cover tightly, and chill for 1 hour, up to 4 hours.
- Preheat oven to 325°F (162°C) and line a sheet pan with parchment paper or a silicone liner. Space 6 cookies per sheet pan (they spread a lot). Bake 10–14 minutes or until slightly browned at the edges. Remove from oven and immediately use the back of a spoon to press the edges of each cookie into the center. Work quickly—the cookies firm up quickly. This gives each cookie a great crispy edge. Let stand on the tray for 4 more minutes, then transfer cookies to a cooling rack. Let cool completely before frosting.
Frosting
- In a stand mixer fitted with the whisk attachment (or a large bowl and a hand mixer), beat the softened (not melted) cream cheese, softened mascarpone cheese, and softened butter until creamy for about 2 minutes at medium-high speed. Add salt and vanilla; beat until smooth. Add powdered sugar, gradually, beating between additions, until frosting is soft and creamy. Avoid overbeating or you’ll get whipped frosting. (If the frosting is too wet, add a bit more powdered sugar. If it is too dry, add a touch of milk or cream.)
- Generously frost completely cooled cookies with a table knife. Depending on how generously you frost the cookies (I love frosting, so use quite a bit!) you’ll have some leftover (see note 1).
Caramel Sauce
- Combine butter, brown sugar, corn syrup, and sweetened condensed milk in a medium pot over medium heat. Stir constantly until butter is melted and ingredients are completely combined.
- Bring the mixture to a boil and boil for 2 minutes, stirring constantly. Immediately remove from heat.
- Let the mixture cool for about 2–3 minutes, stirring occasionally, then add vanilla extract and salt to taste. Add salt gradually. (Not all salts will salt this sauce the same. Add more for a salted caramel sauce and less to just season the sauce.)
- Let the sauce stand to thicken for about 10 minutes, stirring occasionally, and transfer to a resealable plastic bag. Seal without air and cut off the tip with scissors. Pipe a generous drizzle of caramel over the frosted cookies. If desired, top each cookie with an unwrapped and halved soft caramel and a small sprinkle of sea salt flakes.
Recipe Notes
Note 1: This recipe makes more frosting and caramel sauce than you’ll need for the cookies. Both these recipes work better with this quantity; too small a batch and it won’t combine well. Use leftovers on other cookies or to top pancakes/waffles for a fun dessert!
Note 2: If you press a measuring cup into a bag of flour, you will pack in way too much flour; use a spoon to scoop it into a measuring cup and level the top with the back of a table knife.
Storage: Store unfrosted cookies at room temperature. Keep caramel sauce and frosting in separate airtight containers in the fridge. Freeze uncooked dough balls in a freezer bag/container.
