For the Zesty Lemon Dressing

  • 1 large lemon (for zest and 3 tablespoons juice)
  • 4 tablespoons red wine vinegar
  • 1-1/2 tablespoons Dijon-style mustard
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 tablespoon honey (see note below for vegan option)
  • 1 teaspoon minced garlic
  • 1/2 cup olive oil
