So, it was only natural to introduce them to a luxurious pasta creation. The result? A Unique Flavor Profile: The Star is Goat Cheese
What truly sets this Sweet Potato Pasta apart is its distinctive creamy goat cheese sauce. For those who adore goat cheese, this recipe is a dream come true, offering a rich, tangy, and subtly earthy foundation that coats every piece of pasta and vegetable. The goat cheese, when emulsified with pasta water and a touch of heavy cream, creates a velvety smooth sauce that is simply irresistible.
However, if goat cheese isn’t your preferred flavor profile, don’t despair! We understand that its unique taste can be polarizing. In that case, we recommend exploring a similar recipe like our Butternut Squash Pasta, where you can easily substitute butternut squash with sweet potatoes for a delicious alternative that still offers that comforting, creamy texture without the specific tang of goat cheese. For those ready to embrace the goat cheese experience, get ready for an unforgettable culinary journey!
Wholesome Ingredients for a Balanced Meal
Beyond the signature goat cheese, this dish is packed with wholesome ingredients that not only bulk it out but also enhance its nutritional value and complex flavors. Sweet, caramelized onions and aromatic garlic lend depth, while fresh spinach wilts beautifully into the sauce, adding a vibrant touch and a boost of greens. For a complete and satisfying meal, we incorporate succulent roasted chicken sausage. The sausage provides a delightful textural contrast and its savory, often slightly smoky, notes perfectly complement the sweetness of the potatoes and the tang of the cheese. It’s a harmonious blend of ingredients that ensures every bite is rich, flavorful, and incredibly satisfying.

The Art of Roasting: Perfectly Caramelized Veggies and Savory Sausage
While your pasta boils to al dente perfection, the oven works its magic, transforming simple vegetables and sausage into tender, caramelized, and intensely flavorful components. This seasoned mixture of sweet potatoes, onions, and garlic, alongside the chicken sausage, is a critical element of the dish. Roasting at a high temperature encourages the natural sugars in the sweet potatoes and onions to caramelize, creating irresistible crispy edges and soft, tender interiors. Here are some essential tips to achieve roasting perfection:
- Sausage Selection: Any high-quality smoked sausage will work wonderfully in this recipe, but we particularly love Aidells Italian or Chicken & Apple Sausage. Both flavors offer a fantastic complement to the sweet potatoes and creamy sauce, adding a juicy, savory element. Ensure the sausage is pre-cooked for convenience.
- Precise Cutting for Even Cooking: The secret to evenly roasted vegetables lies in consistent sizing. Aim to cut your sweet potatoes and onions into uniform 1/2-inch pieces. This ensures that all ingredients cook at a similar rate, preventing some from burning while others remain undercooked.
- Protect Your Garlic: To achieve tender, sweet roasted garlic without any bitter burnt bits, mimic our technique from the Tomato Basil Soup recipe. Wrap the garlic cloves (still in their papery skins) in a small foil packet with a drizzle of olive oil. This steams them gently while they roast, resulting in incredibly soft, mellow garlic that’s easy to mash into the sauce.
- The Golden Rule of Roasting: Don’t Crowd the Pan! This is perhaps the most crucial tip for superior roasting. Vegetables need space to breathe. When they are crowded and overlapping on a sheet pan, they release moisture, creating steam. Instead of developing those desirable crisp, caramelized edges, they end up steaming, leading to a softer, less flavorful result. Use a very large sheet pan or, if necessary, divide the ingredients between two sheet pans to ensure everything has ample room. This also significantly impacts cook time, as crowded pans will take much longer to achieve the desired texture.
Quick Tip: Maximize Roasting Space
For optimal roasting, we highly recommend using a generously sized sheet pan, such as a 15×21-inch model. This provides plenty of surface area, allowing your sweet potatoes, onions, and sausage to roast beautifully without steaming, ensuring perfect caramelization and texture.

Crafting the Unforgettable Sweet Potato Pasta Sauce
The heart of this Sweet Potato Pasta is its rich, velvety sauce – a culinary marvel that transforms simple ingredients into a gourmet experience. This garlic cream sauce is truly divine, with goat cheese playing the leading role. We carefully balance its tangy notes with the richness of heavy cream and the starchy magic of pasta water. Let’s explore the key components that make this sauce so extraordinary:
- Goat Cheese: The Creamy Core: For this recipe, look for a fresh log of goat cheese (also known as chèvre). Its soft, spreadable consistency and characteristic tangy flavor are essential for achieving the perfect creamy texture and distinctive taste of our sauce. Avoid pre-crumbled goat cheese, as it often contains anti-caking agents that can hinder its ability to melt smoothly into a sauce.
- Heavy Cream: The Key to Opulence: Do not be tempted to substitute the heavy cream. It’s a non-negotiable ingredient that contributes an incredible richness, body, and luxurious thickness to the sauce. It helps to mellow the tang of the goat cheese and creates a beautifully smooth consistency that coats the pasta perfectly.
- Pasta Water: The Secret to Silky Smoothness: This seemingly humble ingredient is the unsung hero of many Italian pasta dishes. Before draining your cooked pasta, remember to reserve a generous amount of the starchy pasta water. This cloudy liquid, infused with starch from the boiling pasta and often seasoned with salt, is crucial for emulsifying the fats from the goat cheese and cream. When combined, these ingredients blend together to form a stable, perfectly creamy, and smooth sauce that clings to every strand of pasta. It also helps to bind the sauce to the pasta and adds a touch of seasoning.
- Roasted Garlic: Aromatic Depth: The garlic cloves, roasted until sweet and mellow, add a profound aromatic depth to the sauce. Once roasted, simply remove them from their skins and mash them into a paste or press them through a garlic press. You have the flexibility to add as much or as little as you desire, but we find that four full cloves strike the perfect balance, infusing the sauce with a warm, savory note without being overpowering.
Quick Tip: The Art of Emulsification
Achieving a truly luxurious, smooth, and flavorful pasta sauce lies in the technique of emulsification. This involves vigorously tossing the hot pasta directly with the goat cheese, heavy cream, and reserved starchy pasta water. The heat from the pasta melts the cheese, while the starch in the pasta water helps to bind the fats and liquids into a cohesive, velvety sauce that is the hallmark of authentic Italian pasta preparation.

How To Master Your Sweet Potato Pasta: Expert Tips for Success
Creating this Sweet Potato Pasta is straightforward, but a few key details can elevate your dish from good to absolutely outstanding. Pay attention to these expert tips for a perfectly balanced and flavorful meal every time:
- The Right Pasta-to-Sauce Ratio: For the ideal balance of pasta and creamy sauce, we recommend using precisely 12 ounces of bowtie or farfalle pasta. Pasta boxes commonly come in 12-ounce or 16-ounce sizes, so be sure to check the packaging and measure accordingly. Using too much pasta can dilute the flavor and texture of your luxurious goat cheese sauce, while 12 ounces ensures every piece is beautifully coated.
- Season Your Pasta Water Generously: This step is non-negotiable for flavorful pasta. Salt the pasta water generously until it tastes like the sea. This is your only opportunity to season the actual pasta itself from the inside out. Well-salted pasta water not only flavors the pasta but also contributes to a more flavorful and well-seasoned sauce when you add the reserved starchy water.
- Embrace Fresh Basil: While fresh basil is often associated with summer, it’s increasingly available year-round at most grocery stores. Adding fresh basil, ribboned or chopped, right before serving truly brightens the dish and introduces a delightful aromatic lift that complements the sweet potatoes and tangy goat cheese beautifully. Its vibrant green color and peppery-sweet notes elevate the entire experience. However, if basil isn’t your preference or readily available, the dish is still wonderfully tasty without it!

Quick Tip: Don’t Forget the Pasta Water!
It’s a common oversight to accidentally drain all the precious pasta cooking water. To ensure you always remember to save it for your creamy sweet potato pasta sauce, try this simple memory booster: Place a one-cup measuring cup directly inside your colander in the sink before you start boiling the pasta. When it’s time to drain, you’ll see the measuring cup, serving as a perfect reminder to scoop out the necessary amount of starchy water before pouring out the rest. This small step makes a huge difference in the sauce’s texture!
Serving Suggestions and Variations
This Sweet Potato Pasta is a complete meal on its own, but it pairs beautifully with a simple side salad dressed with a light vinaigrette to cut through the richness. A crusty loaf of bread is also excellent for soaking up every last drop of that creamy sauce. For added texture and flavor, don’t skip the optional toasted pecans – their crunch and nutty notes are a wonderful contrast to the creamy pasta.
Customization Ideas:
- Vegetarian Option: Easily transform this into a vegetarian delight by omitting the chicken sausage. You can add extra roasted vegetables like bell peppers, zucchini, or mushrooms for more bulk and flavor. Smoked paprika can also add a nice depth in place of the sausage.
- Other Cheeses: While goat cheese is key, if you want to experiment, try substituting a creamy blend of mascarpone and a touch of cream cheese for a milder, equally rich sauce.
- Spice It Up: Add a pinch of red pepper flakes with the Italian seasoning when roasting the vegetables for a subtle kick, or a generous dash at the end for more heat.
- Herb Alternatives: If basil isn’t your favorite, fresh sage or thyme can also be wonderful additions, especially when lightly sautéed before being added to the sauce.
- Different Pasta Shapes: While bowties are charming, feel free to use other pasta shapes like penne, rigatoni, or even a wide tagliatelle. The key is a shape that can hold onto the creamy sauce well.

Equipment
-
Large sheet pan (15″ x 21″)
-
Large pot
Ingredients
- 1 pound sweet potatoes 3-1/4 cups, see note 1
- 1 yellow onion 1-1/2 cups, see note 2
- 2 to 4 garlic cloves
- 2 teaspoons Italian seasoning
- 3 tablespoons olive oil divided
- 12 ounces chicken sausage cut into coins
- Salt and pepper
- 1.5 cups bowtie pasta 12 ounces, plus 2 cups pasta cooking water
- 6 ounces goat cheese see note 3
- 1/2 cup heavy cream
- 1/3 cup finely grated Parmesan cheese see note 4
- 2 cups baby spinach coarsely chopped
- 1 cup fresh basil ribboned, optional
- Toasted and coarsely chopped pecans optional
Instructions
-
Preheat oven to 425°F (218°C). Peel and chop sweet potatoes into 1/2-inch cubes. Cut onion into 1/2-inch cubes. It’s important to chop these small for efficient roasting! Slice chicken sausage into 1/2-inch thick rounds.
-
Place 4 cloves of garlic (still in their papery skins) onto a small square of foil. Drizzle 1/2 teaspoon of olive oil over the garlic, then wrap the cloves tightly in the foil to form a small ball. Add this foil packet to an extra-large sheet pan. To the same pan, add the sweet potato cubes, onion cubes, the remaining olive oil (8 and 1/2 teaspoons, 38g), Italian seasoning, salt (we recommend 1/2 teaspoon), and pepper (we recommend 1/4 teaspoon). Toss all ingredients thoroughly to combine, then spread them out in a single layer on the sheet pan, ensuring they are not crowded. Bake for 15 minutes. Remove the tray from the oven, add the sliced chicken sausage, and toss everything together with the vegetables. Return to the oven and bake for an additional 10–15 minutes, or until the vegetables are tender and slightly caramelized (see note 5). Remove from oven and set aside to cool slightly.
-
While the vegetables and sausage are roasting, bring a large pot of water to a rolling boil over high heat. Add 1 tablespoon of salt to the boiling water, then add the pasta. Cook the pasta according to package directions, but remove it from the heat and drain 1 minute short of the recommended cooking time (it will finish cooking in the sauce). Before draining, use a heatproof glass measuring cup to scoop out about 2 cups of the starchy pasta water and set it aside. Drain the remaining pasta and return it to the empty pot.
-
Add spoonfuls of the goat cheese over the hot, drained pasta in the pot. Gradually add the reserved pasta water, 1/4 cup at a time, while vigorously tossing the pasta with tongs or two wooden spoons. Continue tossing until the goat cheese melts and combines with the pasta water to create a creamy sauce. (Typically, about 1/2 cup of pasta water is needed to reach this stage, but adjust as necessary, both now and in the next step.) Incorporate the heavy cream and continue tossing until the pasta is thoroughly coated and the sauce is lusciously creamy.
-
Add the roasted sweet potato, onion, and chicken sausage mixture to the pot with the pasta. Remove the roasted garlic cloves from the foil and peel off their papery skins. Press the soft garlic cloves through a garlic press directly into the pasta, adding as many cloves as desired for your preferred garlic intensity. Stir in the coarsely chopped baby spinach. Toss everything together, adding more reserved pasta water gradually as needed to achieve an ultra-creamy sauce consistency. While tossing, gradually add the Parmesan cheese, about 2 tablespoons at a time, ensuring it melts smoothly into the sauce.
-
Taste the pasta and adjust seasonings as needed, adding any additional salt or pepper to your liking. If desired, gently stir in the fresh basil. Serve immediately into individual plates and, for an extra touch of flavor and crunch, garnish with toasted and coarsely chopped pecans. Enjoy this indulgent Sweet Potato Pasta while hot!
Recipe Notes
Note 2: You’ll need roughly 1 small yellow onion, which amounts to about 1-1/2 cups (220g) once peeled and cut into 1/2-inch cubes.
Note 3: For the creamy sauce, it’s essential to use a fresh log of goat cheese, not the pre-crumbled variety. The log form melts much more smoothly into the sauce.
Note 4: For the best flavor and melting quality, grate a block of Parmesan cheese using the small holes of a grater. Alternatively, use a high-quality finely grated Parmesan cheese. Canned Parmesan is generally too salty and won’t integrate into the sauce as nicely.
Note 5: Our cooking times are based on using a very large (15×21-inch) sheet pan, which provides sufficient space for the vegetables to roast perfectly. If your vegetables are cut larger or are crowded on a smaller pan, they will take considerably longer to roast and may steam instead of caramelize. If necessary, use two sheet pans to ensure ample space for optimal roasting.
Storage: To store leftover Sweet Potato Pasta, allow it to cool completely before transferring it to an airtight container. It can be safely stored in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of milk or broth to revive the sauce.
